Thai Curry Mussels and Clams

Ingredients

  • 1 lb of mussels
  • 1 lb of Clams
  • 1 leek
  • 2 tbsp of diced chives
  • 2 tbsp of Red Thai Chili Paste
  • 1 can Coconut Milk
  • 3 cloves of garlic
  • 1 small tomato diced up just right

Instructions

  1. Put the Garlic, chives, leeks and diced tomatoes into a large saute pan with 1 Tbsp of oil and saute for 4 minutes.
  2. Add Chili paste and coconut milk, bring to a boil and stir often.
  3. Add shellfish and cook for approximately 7 minutes.
