Thai Curry Mussels and Clams
- 1 lb of mussels
- 1 lb of Clams
- 1 leek
- 2 tbsp of diced chives
- 2 tbsp of Red Thai Chili Paste
- 1 can Coconut Milk
- 3 cloves of garlic
- 1 small tomato diced up just right
- Put the Garlic, chives, leeks and diced tomatoes into a large saute pan with 1 Tbsp of oil and saute for 4 minutes.
- Add Chili paste and coconut milk, bring to a boil and stir often.
- Add shellfish and cook for approximately 7 minutes.
