Baked Sardines with Garlic and Oregano

Ingredients

  • 2 – 2 1/2 pounds of fresh sardines
  • sea salt
  • freshly ground pepper
  • Greek oregano (rigani)
  • 5-6 cloves of garlic, thinly sliced
  • 1/2 cup of olive oil
  • 1/2 cup of lemon juice
  • 1/2 cup of water

Directions

  1. Preheat oven to 355°F (180°C)
  2. Lay sardines in a baking pan and top with all ingredients, using salt, pepper, and oregano to taste (don’t skimp), sprinkling evenly.
  3. Bake for about 45 minutes.
